5 Cheap Ways to Cook Black Beans

If you have a family budget worked out, you know how hard it is to stick to it without having some real concrete plans and strategies to stretch your money as far as it will go. Usually, the first area we can squeeze a few extra dollars out of our wallets is on groceries. I’d like to introduce you to your new partner in your frugal endeavor, the black bean.

We all find ourselves searching the grocery store for something to cook for the family that won’t take our last few dollars. When you find yourself standing in the middle of the store ready to give up, wander over and take a look at the black beans. First take a look at the price. Then take a look at the nutrition label. How can something with the nutrients you need like protein, calcium, iron, and fiber, also be so inexpensive, and low fat, too? When you can feed your family a healthy, delicious meal for literally pennies per serving, you should consider black beans a pantry must-have. How about a few quick and tasty meals that you can prepare for your family so they can fall in love with the wonderful black bean, too.

1) Quick and Easy Beany Soup

Take 1 can each of black beans, navy beans, garbanzo beans, and butter beans, open, drain and set aside. (Yes, you may substitute whatever beans you have on hand.) Now, take a large pot, pour about 2 tablespoons vegetable oil or olive oil in, add 1 cup diced onion and 1 cup finely diced celery. Over medium to medium low heat, cook until celery is transparent. Then add 1 clove garlic, crushed, and let cook for a minute or so. Now pour all your beans into the pot along with 1 small can of diced tomatoes, use seasoned tomatoes if you wish, and 1 small can of chicken broth. Cook nice and slow so it’s just simmering for 20 minutes or so. Soup’s on!

2) Bountiful Bean Salad

You’ll be choosing your favorite canned beans for this salad, keeping in mind color and texture; favorites like black beans, butter beans, navy beans, kidney beans, waxed beans, and whatever else you like. Drain and rinse all the beans and put them in a large serving bowl. To the beans, add some sweet onion, or green onion including the tops, chopped celery, freshly chopped parsley, maybe some fresh rosemary, or whatever herb you like, and top it all with a little shake or two of a very good vinaigrette salad dressing, I use Paul Newman’s Own Balsamic Vinaigrette. You’ve got yourself a kid-friendly and nutritious salad.

3) Too Easy Black Beans & Taco Sauce

My daughter loves black beans, and loves her taco sauce, too. So, the two just seemed a natural when she put them together in a bowl. Now the whole family is hooked! Just drain and rinse a can of black beans, make sure they’re drained well, then pour into a bowl and mix in some of those leftover packets of taco sauce you have laying around the kitchen. It makes a quick and tasty side dish or snack. This easy treat is worth a try even if you’re a bit skeptical. Once you’re hooked, you may want to try using some hot salsa, but just a little to add flavor, not too much sauce. Don’t forget to put some cheese on top!

4) Black Bean Celery Salad with Cottage Cheese

You can throw together a really fast and delicious salad in just a few minutes, with these simple ingredients. Take a salad bowl, add about a 1 cup scoop of cottage cheese, salt to taste, and add some freshly ground black pepper. Thoroughly drain and rinse some canned black beans. Add about 1/2 cup of the rinsed black beans to the top of the cottage cheese. For crunch, dice some celery and put a handful on top of the black beans. This salad is not only yummy, but it’s got the nutrition you’re looking for, like lots of protein, calcium, iron, potassium, and fiber.

5) Quick Black Bean Burrito

If you have a few staples in your pantry you can whip up this simple burrito. You’ll need a flour or corn tortilla, either heated or not, that’s up to you. Drain and rinse your black beans, then start building your burrito however you want. I add black beans, some diced tomatoes, a little onion, lots of shredded cheddar cheese, a little sour cream, leftover rice, some chopped up pieces of chicken from last night, and whatever else I have to use up. Depending on how I feel that day, I go a little heavier on the black beans and lighter on the other stuff. Get your salsa or taco sauce ready and enjoy.

There are many methods of drying herbs. One of them is to dry them in air. This way is good since it preserves the necessary elements of the herbs, such as natural oils. It is valid for some herbs that are free of high moisture content, such as oregano, thyme, and bay.

How to Air Dry Herbs

Herbs can be cut in the mid morning when the dew has dried. Leaves can be removed if shows insect damage or disease. It may be rinsed under cool water along with. Everybody loves burgers cooked in the backyard. But, you can’t eat the same old burgers all the time, so here are the 5 best burger recipes I could find. I have cooked and enjoyed them all. See how they sound to you.

Grilled Inside-Out Southwestern Cheeseburgers- Serves 4

Betty Crocker comes through more than Michael Jordan did. This recipe comes from bettycrocker.com, her website.

The ingredients you’ll need to make these burgers:

one and a half lb lean ground beef two tablespoons finely chopped onion two tablespoons drained Old El Paso chopped green chiles eight slices pepper Jack cheese, 2×1x1/4 inch (about four oz) four kaiser rolls, split a quarter cup Old El Paso taco sauce or Old El Paso Thick ‘n Chunky salsa

Prepare as follows:

Heat gas or charcoal grill. In medium bowl, mix beef, onion and chiles. Shape mixture into 8 thin patties. Top each of 4 patties with 2 slices cheese. Place remaining beef patties on top; pinch edges to seal securely. Place patties on grill over medium heat. Cover grill; cook 14-16 minutes, turning once, until burgers are slightly firm when pressed in center. Add rolls, cut sides down, for last 4 minutes of grilling or until toasted. Serve burgers on rolls with taco sauce.

Zesty Burgers- 4 Servings

1 to 1 1/4 pounds lean ground beef 1/4 cup onion, chopped 2 tablespoons green pepper, finely chopped 3 tablespoons ketchup 1 tablespoon prepared horseradish 1 teaspoon salt 2 teaspoons prepared mustard 1 dash pepper toppings 4 split toasted buns

Preparation Instructions:

Combine the lean ground beef with the onion, the green pepper, ketchup, horseradish, salt, mustard, and pepper. Mix lightly. Make 4 patties 1/2 inch thick patties. Grill or broil to your preference, between 5 and 7 minutes per side. Serve on the buns, with the toppings you prefer.

Texas Stuffed Grilled Burgers- Serves 5

5 pounds lean ground beef 6 tablespoons Worcestershire sauce 2 teaspoons hickory seasoning (optional) salt and pepper to taste 2 cups chopped onion 2 cups chopped fresh mushrooms 2 cups chopped cooked ham 3 cups shredded Cheddar cheese

Preparation directions:

Preheat a grill for high heat. When the grill is hot, lightly oil the grate. In a large bowl, mix together the ground beef, Worcestershire sauce, hickory seasoning, salt and pepper until well blended. Make 8 or 10 balls, and flatten into patties. On one half of the patties, distribute the onions, mushrooms, ham and cheese. Carefully cover the piles with the remaining patties, making sure to seal all of the edges of the patties together tightly and enclose the filling. Grill the patties for 8 to 10 minutes per side, or until meat is well done, and cheese in the center is melted.

Marinated Hamburgers

Shop for:

3 T. Lemon Juice 1 1/2 tsp. seasoned salt 1 T. Worcestershire sauce 1 T. soy sauce 1 T. A-1 sauce 1 T. oil 1/2 C. beef broth 1 tsp. Heinz 57 sauce 1/4 tsp. garlic salt 1 tsp. vinegar

To prepare:

Mix all the ingredients together.

Take 1 1/2 lbs hamburger and shape into patties.

Place in a covered container and pour marinade mixture over the hamburgers. Cover and refrigerate 12 hours or overnight.

Cook when ready, using high heat to sear the burgers and retain the juices.

Mushroom Stuffed Burgers- serves 6

Get together:

1 1/2 pounds of hamburger 1/4 cup of finely diced onion 2 eggs, lightly beaten 3/4 cup of soft bread crumbs 1/4 cup of ketchup 1/2 teaspoon of salt 1/8 teaspoon of pepper 2 tablespoons of butter 1/2 pound of sliced mushrooms 6 slices of (Swiss) cheese

Cooking Instructions:

Mix together the first 7 ingredients. Create a dozen patties, each about a quarter of an inch in thickness. Lightly saute the mushrooms in the butter. Put the sauteed mushrooms on 6 of the patties. Then top with the remaining 6 patties, sealing the edges tightly.

Broil or grill to desired doneness. Top with cheese. Serve on toasted buns.
